Ingredients for 4 servings:
- 500 g minced meat
- 1 bell pepper(s), red, diced
- 1 bell pepper(s), yellow, diced
- 1 zucchini, diced
- 500 g tomatoes, pureed
- 500 ml vegetable stock
- 3 tsp mustard
- salt and pepper
- Dried herbs from Provence
- sour cream, as desired
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the minced meat in oil. Sauté the bell peppers and zucchini, then add the passata and broth. Add mustard and dried herbs, if desired, and bring to a boil. Season the soup with salt and pepper. Serve with a dollop of sour cream. Serve with a baguette.
