Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
ideal for cold days, but also for any party
First, soak the bread roll in the milk for the meatballs. Peel and finely dice the onion, and sauté in the butter until translucent. Squeeze the bread roll a little (if necessary), add the onions, mix briefly, and knead everything together with the minced meat and egg. Add the paprika and season with salt and pepper to taste. If the mixture is still too soft, knead in some breadcrumbs. Refrigerate so that the minced meat mixture can bind well. Meanwhile, for the soup, peel and finely dice the onion and garlic cloves, deseed the bell peppers, and finely slice them. Heat the butter in a saucepan, first sauté the onion and garlic, then add the finely chopped bell peppers and sauté briefly. Sauté the tomato paste in it, then deglaze with the passata, mix well, and then stir in the chopped tomatoes. Season with paprika powder and dilute with vegetable stock to the desired consistency (it will continue to reduce slightly). Now add the oregano, thyme, and basil, cover, and simmer for a while. Meanwhile, form the minced meat mixture into ping-pong ball-sized dumplings. Add these to the soup along with the kidney beans and let them simmer for about 10-15 minutes (try not to let the soup boil too much, especially at the beginning, so the dumplings don’t fall apart). Then thin the soup again if necessary, season with salt and pepper, and add a little more chili powder if desired. It tastes great warm, lukewarm, or cold, can be reheated easily, and is quite easy to cook in larger batches. The specified quantity is enough for 4 people as a main course. Fresh white bread goes well with it.
