Ingredients for 6 servings:
- 1 bell pepper(s), red
- 1 bell pepper(s), green
- 1 bell pepper(s), yellow
- 1 cucumber(s)
- 1 jar feta cheese with olives
- 250 g date tomatoes or cocktail tomatoes
- 2 large spring onions with green
- dill
- salt and pepper
- Vinegar
- possibly olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
great for grilling
Wash the bell peppers, remove the seeds, and cut into small cubes. Peel, halve, quarter, and finely dice the cucumber. Wash and halve the tomatoes, slice the spring onions into thin rings, and place everything in a large bowl. Add the feta cheese with oil and olives, season with salt and pepper, a generous splash of vinegar, and as much dill as you like. Mix thoroughly, let it sit for a while, and you’re done. Delicious for grilling or just on its own with rustic baguette or white bread.
