Ingredients for 2 servings:
- 100 g lamb’s lettuce
- 300 g cherry tomatoes
- 1 cucumber(s)
- 300 g mushrooms
- 300 g chickpeas, drained
- 1 avocado(s)
- 1 mango(s)
- 10 g honey
- 2 tbsp olive oil
- 6 tbsp balsamic vinegar
- some lemon juice, freshly squeezed
- some salad herbs
- some salad seed mix

Quarter the mushrooms, sauté in a pan, and let cool. Trim and roughly chop the lamb’s lettuce. Chop all the salad ingredients and arrange them in a salad bowl. Mix the dressing, season to taste, and drizzle over the salad. Garnish with some seeds and serve.
