Summer salad with tomatoes and feta

Ingredients for 4 servings:

  • 250 g leaf salad, of your choice
  • 4 large tomatoes
  • 125 g feta cheese, matured in brine
  • 6 tbsp olive oil
  • 4 tbsp vinegar, raspberry
  • 1 tsp mustard, medium hot
  • 1 tbsp fresh basil, chopped
  • 1 tbsp honey
  • 1 tbsp nuts, as desired
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

The raspberry vinegar does it!

Wash the lettuce thoroughly, drain, and cut into bite-sized pieces if necessary. Wash and slice the tomatoes. Dice the feta, reserving the brine. Prepare a dressing with olive oil, raspberry vinegar, mustard, basil, honey, spices, and the reserved brine. Combine all ingredients in a bowl and mix.
