Sunken Apple Pie

Ingredients for 1 servings:

  • 750 g apples
  • 3 tbsp lemon juice
  • 125 g butter or margarine, soft
  • 1 pinch of salt
  • 175 g sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 200 g flour
  • 2 tsp baking powder
  • 3 tbsp whipped cream
  • 4 tbsp pine nuts
  • 150 g crème fraîche
  • 1 pack of vanilla sauce powder for cooking
  • 2 tsp powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Grease a 26cm springform pan. Peel, quarter, and core the apples. Drizzle with lemon juice. Beat together the fat, salt, 125g sugar, and vanilla sugar until creamy. Beat in 3 eggs one at a time. Mix the flour and baking powder and stir in alternately with the cream. Pour into the springform pan and level the surface. Pat the apples dry with kitchen paper, arrange them on the dough, and press down lightly. Sprinkle with 2 tablespoons of pine nuts. Bake in a preheated oven (175°C) for 12-15 minutes. Mix the crème fraîche, 1 egg, 50g sugar, and gravy powder. Pour over the apples in the pan. Continue baking at the same temperature for about 50 minutes. Remove from the pan, loosen the edges of the pan with a knife, and let cool in the pan. Toast 2 tablespoons of pine nuts without fat. Dust the cake with powdered sugar. With 16 pieces, each piece has 250 kcal.
