Super-quick bean and tomato soup

Ingredients for 2 servings:

  • 2 onions
  • 5 slice(s) meat sausage, spicy or any kind of meat
  • 1 garlic clove(s)
  • some oil
  • 1 can white beans
  • 3 tbsp tomato paste
  • 1 tsp salt
  • some pepper
  • some chili powder
  • 1 pinch of nutmeg
  • 1 tbsp parsley
  • some water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Variable with any sausage, minced meat, other meat – also vegetarian possible

Peel and dice the onions. Cut the sausage into small pieces, peel and halve the garlic clove. Fry everything together in a little hot oil until the onions are translucent and the meat is lightly browned. Now add the can of beans, then fill the can halfway with water and add this as well. Stir everything well and bring to a boil briefly. Now add the tomato paste, salt, and all the spices. Stir well and let it cook briefly until the tomato paste has combined well with the bean water and the liquid has turned a beautiful dark orange color (takes about 3-4 minutes). Now add the parsley. You can eat this as a soup, but it can also be served with rice. The meat can be varied greatly, but you can also omit it. Then it’s even a vegetarian dish.
