Surimi cocktail

Ingredients for 4 servings:

  • 250 g surimi
  • 2 avocados
  • 3 leaves of Lollo Rosso
  • 1 lemon(s), juice
  • 4 tbsp cream
  • 4 tbsp salad cream (Miracel Whip)
  • 4 tbsp ketchup, sweet
  • ½ tsp chili sauce, hot
  • salt and pepper

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

as an amuse gueule, starter, salad, for a buffet or also very suitable for a festive menu

Cut the surimi into small pieces, as well as the avocados. Place the surimi in a bowl, add the avocados, and immediately pour over the lime juice to prevent them from tarnishing. For the sauce, mix the cream, Miracle Whip, ketchup, and chili sauce well and season with salt and pepper to taste. Pour the sauce over the surimi and avocados and mix well. Line a decorative glass (e.g., an ice cream glass) with a leaf of Lollo Rosso (leaving a bit of the leaf hanging over the rim) and carefully spoon in the remaining ingredients. Refrigerate for about an hour and serve slightly chilled.
