Ingredients for 1 servings:
- 2 eggs
- 75 g butter, melted
- 125 g sugar
- 50 g baking cocoa
- 1 pinch of salt
- 150 g flour
- 1 tsp baking powder
- 120 ml water or milk
- 200 g chocolate chips
- 125 g butter, very soft

- 1 tsp vanilla extract
- 200 g flour
- ½ pack of baking powder
- 1 pinch of salt
- 80 ml milk
- Powdered sugar for dusting
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
for a brownie pan approx. 20 x 20 cm and a 25 cm loaf pan
Melt the butter and beat with the sugar for a few minutes. Stir in the cocoa. Then gradually add the eggs. First stir in the water, then fold in the flour, salt, baking powder, and almonds with a spatula. Finally, fold in the chocolate chips. Pour the batter into a greased brownie pan (approx. 20 cm x 20 cm) and smooth it down. Preheat the oven to 180°C (top/bottom heat). Bake the batter on the middle rack for 20-22 minutes. You can’t do the toothpick test here, as the brownies will be chewy and the batter will stick to the toothpick. Leave the oven on. Cut out the brownie while it’s still hot using a bunny cookie cutter. For the light batter, mix the softened butter with the sugar. Add the vanilla extract. Beat in the eggs one at a time. Mix the flour with the salt and baking powder and stir into the butter mixture along with the milk. If the batter is too dry, add a little more milk. Spread a small portion of the light batter into a greased 25cm loaf pan. I lined it with baking paper so that the cake can be removed from the pan more easily and securely after baking, ensuring that the base is just covered. Now place the cut-out brownie bunnies close together in the center of the light batter, leaving no space between each bunnie. Carefully spread the remaining light batter over the top. The bunnies should not be sticking out of the surface! Bake the cake in the hot oven for about 40 minutes on the middle rack. The skewer test is only necessary on the sides and on the surface, which cracks. The brownies are already baked in the middle. The cake tastes best the day it is baked and, in my opinion, has more vanilla flavor than the next day. So if you have visitors, I would bake and serve the cake fresh.
