Sashimi: Sushi without rice for gourmets

Fresh, raw fish is the basis of sushi. Sashimi is no exception but dispenses with rice. It is thinly sliced ​​salmon or tuna served with pickled ginger (gari). Prepare sashimi as follows:

  • You need a fresh tuna or salmon fillet, preferably boned and skinned. You can find sashimi-grade fish in some supermarkets, so be sure to ask at the fish counter. Most of the time, the sellers also have one or two tips for the preparation ready.
  • You will also need the pickled ginger, a cutting board, and a sharp sashimi knife.
  • Wash your hands and then wash the fish filter. It is important that you process the fish as quickly as possible.
  • If using tuna, place the fillet on the board with the largest side straight. Now cut 0.5 centimeter wide slices with a quick pull of the knife.
  • Place the salmon fillet at an angle on the cutting board. Again, cut 0.5-centimeter wide slices. You should align the knife with the fat lines at an angle of 45°.
  • For both fillets, be careful not to squeeze them as you cut.
  • Once you have cut the fish into small pieces, arrange the slices decoratively on a plate and prepare the pickled ginger.
  • First, take it out of the glass and let it drain well. Then all you have to do is arrange it on the plate.
  • Eat the sashimi strips as soon as possible, otherwise unpleasant flavors and germs can develop.

Sushi with cucumber instead of rice: the preparation of Naruto rolls

Naruto rolls are a popular sushi variation that features fish wrapped in cucumber. The cucumbers serve as a substitute for rice and give the filling a new touch thanks to their fresh taste.

  • You will need a long cucumber, half an avocado, and three strips of salmon. This can but does not have to be of sashimi quality. All that matters is that it is fresh. You will also need a sushi mat, a sharp knife, and cling film, as well as a vegetable slicer or a vegetable peeler.
  • Peel the cucumber and then cut it into long strips with a slicer or peeler.
  • Then spread out the sushi mat and cover it with cling film. Arrange the cucumber strips on the cling film to form a square. The strips should always overlap.
  • Peel the avocado and then cut it into small pieces. Spread them on the cucumber strips so that you can easily roll them up and place the salmon on top of the avocado.
  • Now roll up the Naruto Roll and seal it with cling film. Then chill them in the fridge for about 15 minutes.
  • Alternatively, you can put the roll in the freezer for 10 minutes.
  • After the waiting time, you need to get the sushi variant out of the fridge, unwrap it, and then cut it into pieces with a knife.

The seaweed roll: maki sushi without rice

Last but not least, we will introduce you to a variant of maki sushi, which also does not require rice.

  • The ingredients are 100g smoked salmon, some nori sheets, half a pepper, half an avocado, and half a cucumber. You will also need kitchen utensils for this, such as the sushi mat, the vegetable peeler, and a sharp knife.
  • First, cut the peppers and cucumber into thin strips while leaving the salmon and avocado a bit thicker.
  • Lay a sheet of nori on the sushi mat and place the vegetables and fish on it. It is important that the ingredients do not protrude over the nori sheet.
  • Now wet your fingers with warm water and roll the maki rolls. Seal the ends with the excess nori. You can then cut and serve the sushi.
