- 1 slice(s) of black bread
- arugula

- some vinegar, white

Tired of the boring breakfast egg? Try something new!
Put 300 ml of water in a saucepan, add a good splash of white vinegar and heat, but do not boil. Halve the avocado, remove the pit and mash the flesh with the juice of half a lemon until smooth. Using a fork is the easiest way to do this; then add a little salt and set aside. Top a slice of good brown bread with some arugula, add the avocado mixture and set aside. Now quickly mix the boiling water with the vinegar using a whisk or fork to create a whirlpool. Quickly crack the egg into the water. After 3 minutes, remove the egg with a ladle and place it on the brown bread. Cut it briefly for effect, add a little seasoning and enjoy. Egg with a twist – a great creation that satisfies your protein cravings, keeps you full for a long time and tastes delicious too.
