Rolls with quark and carrots

Ingredients for 4 servings:

  • 2 rolls (wholemeal)
  • 100 g quark (low-fat quark, 1% fat)
  • 2 large carrots
  • 100 g sunflower seeds
  • 2 dashes lemon juice
  • 50 g parsley, chopped (frozen)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the sunflower seeds in a pan without fat. Meanwhile, grate the carrots, chop the parsley, and slice the whole-wheat rolls. Mix the grated carrots with the roasted sunflower seeds and parsley, add a few squeezes of lemon juice, and season with salt and pepper. Spread the quark thickly on the roll halves, then spread the carrot mixture on top.
