Swabian cheese spaetzle

Ingredients for 3 servings:

  • 4 large onions
  • 1 tbsp clarified butter
  • 300 g cheese (Emmental) in one piece
  • 1 tbsp butter
  • Salt from the mill
  • Pepper from the mill
  • 800 g spaetzle (refrigerated or freshly cooked)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the onions, slice them into rings, and fry them in a pan with heated lard until golden brown. Drain on a paper towel. Finely grate the cheese. Heat the butter in a pan. Sauté the fresh spaetzle for about 3-4 minutes. Add the cheese and let it melt. Finally, season with salt and pepper. Arrange the cheese spaetzle on plates and serve sprinkled with the onion rings.
