Swabian Souls
The perfect swabian souls recipe with a picture and simple step-by-step instructions.
- 500 g Spelled flour
- 15 g Dry yeast
- 10 g Salt
- 300 ml Lukewarm water
- Salt roughly as needed
- Caraway seeds as required
- Mix all ingredients with a dough hook and slowly add water. Then knead on high for 5 minutes.
- Let rise in a warm place for 60 minutes. Knead twice with wet hands during this time.
- The dough feels a little mushy.
- After the 60 minutes, chop the dough into pieces with a spatula and pull lengthways.
- Place on a baking sheet lined with parchment paper. Cover and let rise for another 15 minutes.
- Preheat the oven to 250C. Place an ovenproof bowl of water on the bottom of the oven.
- Spray the dough pieces again with water, sprinkle with salt and caraway seeds. Bake in the oven on the lowest rail first to 250C, check for about 8-10 minutes more often, then switch down to 180C, and bake again for 5 minutes.
- Until they are so light gold, which varies depending on the oven.
- The souls should be crispy.
