Ingredients
 

  • 500 g Spelt flour
  • 15 g Dry yeast
  • 10 g Salt
  • 300 ml Lukewarm water
  • Salt roughly as needed
  • Caraway seeds as required

Instructions
 

  • Mix all ingredients with a dough hook and slowly add water. Then knead on high for 5 minutes.
  • Let rise in a warm place for 60 minutes. Knead twice with wet hands during this time.
  • The dough feels a little mushy.
  • After the 60 minutes, chop the dough into pieces with a spatula and pull lengthways.
  • Place on a baking sheet lined with parchment paper. Cover and let rise for another 15 minutes.
  • Preheat the oven to 250C. Place an ovenproof bowl of water on the bottom of the oven.
  • Spray the dough pieces again with water, sprinkle with salt and caraway seeds. Bake in the oven on the lowest rail first to 250C, check for about 8-10 minutes more often, then switch down to 180C, and bake again for 5 minutes.
  • Until they are so light gold, which varies depending on the oven.
  • The souls should be crispy.
