Ingredients for 2 servings:
- 400 g swede(s)
- 2 large potatoes
- 50 g smoked bacon
- 2 m.-sized onion(s)
- 1 garlic clove(s)
- 5 sprigs of thyme, fresh
- 2 cl balsamic vinegar, light
- 2 cl white wine
- 200 ml vegetable stock
- 100 ml cream
- 1 tbsp butter
- salt and pepper
- Sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
with potatoes and bacon
Peel the swede and potatoes and cut into 1 cm cubes. Dice the onions, garlic, and bacon. Fry the bacon in a casserole dish or deep frying pan. Add a little more neutral oil if desired. Then fry the onions and garlic until translucent. Add the swede and potato cubes. Deglaze with balsamic vinegar and white wine. Pour in the vegetable stock and add half of the stripped thyme leaves. Bring to a boil briefly, then cover and simmer for 30-45 minutes, until the swede cubes are soft. 10 minutes before the end of the cooking time, add the cream and simmer uncovered until creamy. Finally, stir in the butter and season with salt, pepper, and sugar. Sprinkle with the remaining thyme leaves and serve. We had a piece of breaded fish with it, which went very well with the dish.
