Swede curry

Spread the love

Ingredients for 4 servings:

  • 1 turnip(s)
  • 1 onion(s)
  • 2 garlic cloves
  • 1 bunch of parsley
  • 2 tbsp tahini
  • lemon juice
  • curry powder
  • Salt
  • Oil for frying
  • e.g. chili pepper(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the turnip and cut into approximately 1 cm cubes. Heat oil in a pan and fry the turnips. Finely chop the onion, add it to the turnip cubes, and fry briefly. Finely chop the chili pepper (amount to taste) and garlic and add them. Make sure the garlic doesn’t turn dark and therefore bitter. Lightly season with salt, add about 100 ml of water, and simmer the turnips with the lid closed for about 15 minutes until tender. In the meantime, finely chop the parsley. The parsley can also be omitted. Once the turnips are cooked (soft but not mushy), stir in the sesame paste, curry powder, and parsley, and season with lemon juice and salt. Serve with rice, for example.
