Ingredients for 1 servings:

  • 2 eggs
  • 220 g sugar
  • 1 tsp vanilla sugar
  • 150 g flour
  • 1 tsp baking powder
  • 75 g butter, melted
  • 200 g currants, red
  • Fat and flour for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Beat the eggs until thick and foamy, gradually adding the sugar. Combine the flour and baking powder, carefully sift them into the mixture, and fold them into the sugar and egg mixture along with the melted butter. Pour into a prepared, greased and floured tart pan and scatter the trimmed currants on top. Bake in a preheated oven at 180°C (top/bottom heat) for about 20-30 minutes. The batter should not overcook. Sprinkle with powdered sugar, but vanilla ice cream or whipped cream also goes well with it.
