Ingredients for 5 servings:
- 700 g green beans
- 1 liter of salt water
- 3 cloves
- 3 bay leaves
- 100 g butter
- 3 tbsp wholemeal spelt flour
- 1 liter of water
- 2 tbsp vegetable stock powder
- e.g. salt and pepper
- n. B. sugar
- e.g. wine vinegar
- n. B. Sauce thickener, dark
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
according to an old family recipe
Add the finely chopped and washed beans to boiling salted water and cook with the cloves and bay leaves. Melt the butter in another pot and stir in the flour to make a brown roux. Add the hot bean water a spoonful at a time, whisking to avoid lumps. Add another liter of water and season with vegetable stock powder, salt, pepper, sugar, and the wine vinegar to taste. Bring to a boil. Thicken with brown sauce thickener, if desired. Finally, add the beans and serve hot.
