Ingredients for 10 servings:

  • 3 kg roast beef
  • 3 tbsp Ghee or Clarified butter or oil
  • Salt and pepper, black and green from the mill

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Trim the meat and carefully score the fat layer on top in a diamond shape (be careful not to cut into the meat!). Brown the meat all over in a sufficiently large pan in plenty of fat. Then season with salt and pepper, place in the oven preheated to 200°C (top/bottom heat), and reduce the temperature to 160°C (320°F). Check the internal temperature with a meat thermometer: when it reaches 50°C (122°F), turn the oven off, but leave the meat in until it reaches an internal temperature of 57°C (135°F). The exact time depends on the thickness of the piece of meat. Because it has already rested in the oven, the meat can be served immediately using this method. It also tastes delicious cold, thinly sliced.
