Ingredients for 1 servings:

  • 4 dl water
  • 6 dl white wine, sweet, e.g. Muscat or Riesling
  • 150 g sugar
  • 2 vanilla pods
  • 2 cloves
  • 2 tbsp peppercorns, mixed
  • 1 tbsp mustard seeds
  • 1 kg grapes, white, seedless

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Scrape out the vanilla pod and bring the seeds and pods to a boil with all the other ingredients, including the mustard seeds, then simmer over medium heat for a quarter of an hour. Discard the cloves and seeds, add the grapes, and simmer gently until the mixture thickens and forms a puree. Mash the grapes with a potato masher if necessary. Remove the vanilla pods and let cool. Serve at room temperature as a side dish to game (instead of lingonberry/cranberry sauce).
