Ingredients for 1 servings:
- 500 g onion(s), red, cut into rings
- 300 ml vinegar (herb vinegar or as desired)
- 100 g white sugar
- ¼ tsp salt

Peel the onions and slice into rings, not too thin (weigh them first); these can be up to 1 cm wide. Place them in a heatproof bowl. Bring the vinegar, sugar, and salt to a boil in a saucepan, stirring constantly until the sugar has completely dissolved. Pour this over the onions while it’s hot and stir briefly. Leave to stand until it’s cooled; the onions will turn pink in the meantime. Transfer everything to a large screw-top jar and place in the refrigerator; it will keep well for up to two months. The onions are delicious with a snack or with pan-fried meat.
