Ingredients for 4 servings:
- 4 pork schnitzels
- 1 can apricot(s), 425 ml
- 1 can kidney beans
- 3 tbsp oil
- 1 tbsp soy sauce
- 1 pinch of sambal oelek
- ½ tsp curry
- ½ tsp sauce thickener, dark
- 1 tsp tomato paste
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the schnitzel and apricots into strips or chunks. Sear the meat in hot oil. Add the beans (without liquid), soy sauce, tomato paste, spices, and a little apricot juice. Stir briefly and simmer for 10 minutes. Add the apricots and simmer for 5 minutes. If desired, thicken the sauce slightly with the sauce thickener. Add a little more apricot juice, if desired. Serve with rye baguette, boiled potatoes, and rice.
