Ingredients
 

Lemongrass Risotto

  • 3 Lemongrass sticks
  • 3 cups Milk
  • 1 cup Water
  • 2 tsp Sugar
  • 1 cup Risotto rice
  • 1 tbsp Butter
  • 1 cup Martini bianco
  • 1 cup Cream
  • 1 tsp Bourbon vanilla sugar
  • 1 tsp Lemon zest

  • 4 tbsp Pomegranate seeds
  • 2 tbsp Chocolate shavings
  • 2 tbsp Orange zest
  • 1 Lemongrass stick
  • 1 Lemon wedge

  • Since I just wanted to pamper myself, I cooked ALONE ONLY FOR ME ... the amount of 1 CUP in the recipe therefore refers to a very small mocha cup in this case ... I can only say: it was super delicious! !!

preparation

  • Wash the lemongrass sticks and cut into small rings - bring the milk, water, sugar and lemongrass rings to a boil in a saucepan and then cover them for at least 1 hour. Let it infuse without adding heat so that the lemongrass aroma can develop well

  • Pour off the lemongrass milk through a sieve and prepare - roast the risotto rice well in the hot butter - then deglaze with the martini - let the liquid boil down while stirring - then add a little lemongrass milk to the rice and stir often - takes about 15-20 min.- finally add a cup of liquid cream, vanilla sugar and half of the lemon zest

for the decoration ...

  • Break open the pomegranate and peel the seeds out - slice the chocolate into shavings, take the zest from an organic orange

serve

  • Now put the finished risotto on a cake server and spread it into the desired shape with a knife - then carefully slide everything over the preheated plate - add the rest of the decoration and then enjoy ......
