makes 21 rolls

Sift the flour into a bowl and make a well in the center. Add the salt and egg and sprinkle with 50g of sugar. Melt the butter and mix with the cold milk (except for 1 tablespoon). Mix the yeast with 10g of sugar. Add the yeast and lukewarm milk mixture to the flour and knead everything into a smooth yeast dough. Dust with flour, cover and let rise in a warm place for about 30 minutes. Knead the dough on a floured surface and let rise for another 15 minutes. Divide the dough into thirds and knead in the almonds, raisins, and granulated sugar, leaving only 1 tablespoon left. Form each third into a roll and divide it into 7 equal pieces. Shape each piece into a round roll. Place the rolls loosely together on a greased baking sheet to form a party sun. Mix the egg yolk with 1 tablespoon of milk and brush the rolls with it. Decorate with the reserved almonds, sugar powder, and raisins. Bake the party sun in a preheated oven at 200°C (top/bottom heat) (175°C fan oven or gas mark 3) for about 20 minutes.
