Sweet pea mousse with mint

Ingredients for 4 servings:

  • 100 ml water
  • 200 g peas
  • 1 lemon(s), zest and juice
  • 5 mint leaves (chocolate mint)
  • 125 g white chocolate
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 200 ml whipped cream
  • some chocolate mint bars

Instructions

Working time approx. 5 minutes; Rest time approx. 12 hours 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 55 minutes

Peel the lemon zest, but not the white part, and squeeze out the juice. Roughly chop the chocolate. Bring the water to a boil with the peas, lemon zest, and mint leaves, then cover and cook the peas until soft. Remove the lemon zest and purée the peas very finely. Add the chocolate, sugar, vanilla sugar, salt, and lemon juice, stirring to melt, and let cool for about 30 minutes. Whip the cream until stiff and fold into the cooled mixture. Pour into glasses and refrigerate overnight. Garnish with mint leaves to serve. You can also use iced and sugared peas as decoration.
