Sweet potato and carrot soup

Ingredients for 8 servings:

  • 2 onions
  • 4 cm ginger, fresh
  • 1,000 g sweet potatoes
  • 800 g carrot(s)
  • 4 tbsp olive oil
  • 1,000 ml vegetable broth
  • 2 tsp, heaped paprika powder
  • Salt
  • pepper
  • 1 cup crème fraîche

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and finely chop the onions and ginger. Peel and dice the sweet potatoes and carrots. Heat the oil in a saucepan and sauté the onions and ginger. Add the sweet potatoes and carrots and sauté briefly. Pour in the broth, season with paprika, salt, and pepper, and simmer for about 20 minutes. Blend the soup until smooth, stir in the crème fraîche, and season to taste. This dish is delicious with fresh baguette, for example.
