Ingredients for 4 servings:
- 2 medium-sized onions, diced
- 2 tbsp olive oil
- 2 cloves garlic, pressed
- 1 large sweet potato(s), peeled, diced
- 2 red bell peppers, diced
- 2 tbsp tomato paste, 3-fold concentrated
- 2 tsp turmeric
- 2 tsp Madras curry powder
- 200 g lentils, red
- 400 ml coconut milk
- 250 ml vegetable stock
- Salt and pepper, black from the mill
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Heat olive oil, sauté onions, add garlic, sweet potatoes, bell peppers, tomato paste, turmeric, curry powder, and lentils. Pour in coconut milk and vegetable stock. Bring to a boil, then cover and simmer over low heat for about 25 minutes. Season with salt and pepper.
