Ingredients for 4 servings:
- 4 oranges (approx. 150 g each), 1 squeezed, the rest filleted and diced, juice collected
- 2 tsp honey, liquid
- 1 star anise
- 4 drops of rum flavoring
- 200 g butternut squash, peeled, pitted, diced, prepared and weighed
- some mint, fresh, chopped
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Bring the orange juice to a boil with a little water, honey, star anise, and rum flavoring. Add the pumpkin and simmer over low heat for 10 minutes. Add the oranges and sauté for 5 minutes. Then remove the star anise and season the compote with mint.
