Sweet potato and onion quiche

Ingredients for 6 servings:

  • 220 g flour
  • 100 g clarified butter
  • salt and pepper
  • 2 tbsp crème fraîche
  • 50 g Cheddar cheese, grated
  • rosemary
  • 2 sweet potatoes
  • 2 large onions
  • 1 tbsp sugar
  • 2 tbsp clarified butter
  • 3 m.-sized eggs
  • 200 ml cream
  • 100 g Cheddar cheese, grated

For the base, mix together the flour, lard, pepper, salt, and Cheddar cheese, then add the crème fraîche. Knead until a smooth dough forms—this may take a while. Roll out the dough on a lightly floured surface, transfer it to the tin, and refrigerate until ready to use. Peel and dice the sweet potatoes, peel the onions, and slice them into thin rings (set a few aside for decoration). Fry the onion rings in clarified butter and sprinkle with sugar. Add the sweet potato cubes and fry for about 5 minutes. Meanwhile, grate the cheese. Mix the cream and eggs, and add the cheese. Season well with salt and pepper. Pour the potato and onion mixture onto the quiche base and pour the cream mixture over it. Decorate with the remaining onion rings. Sprinkle with rosemary. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Bake the quiche for about 35 minutes, until golden brown. Cut into 6 pieces as an appetizer.
