Ingredients for 4 servings:
- 500 g sweet potatoes
- 1 ½ onions
- 32 g fresh ginger
- 625 ml vegetable broth
- 63 ml orange juice
- 175 g crème fraîche
- 1 tbsp, sautéed turmeric
- some cayenne pepper
- e.g. salt and pepper
- tbsp, sautéed chives
- 2 tbsp oil

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
for autumn
Peel the sweet potatoes, peel the onions, and dice both. Peel the ginger and also dice them finely. Sauté the sweet potatoes, onions, and ginger with the oil in a saucepan. Pour in the vegetable stock and simmer, covered, over medium heat for about 15 minutes. Add the orange juice and crème fraîche to the soup and blend. Then season to taste.
