Sweet potato soup

Ingredients for 3 servings:

  • 400 g sweet potatoes
  • 1 onion(s)
  • 2 tbsp butter
  • salt and pepper
  • some sugar
  • 100 ml white wine
  • 1 orange(s), organic
  • 600 ml vegetable stock
  • 100 g cream

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

with orange note

Peel and dice the sweet potatoes and onions. Heat the butter in a large pot. Sauté both until lightly browned. Season with salt and sugar and deglaze with white wine. Grate the orange zest and cut the segments from the membranes. Add the orange zest and vegetable stock to the potatoes. Cover and simmer for 15 minutes. Finely chop the skinless orange segments and add them to the soup with the cream. Simmer briefly, then puree until smooth. Season with salt and pepper. Serve with some white bread.
