Sweet potato soup

Ingredients for 4 servings:

  • 1 large sweet potato(s)
  • 1 bell pepper(s), red
  • 2 carrots
  • 2 onions, red
  • 1 clove(s) garlic
  • 750 ml water
  • 2 cubes vegetable stock, instant
  • 3 tbsp olive oil
  • some pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

simple and vegetarian

Peel, slice, and dice the red onions and garlic. Sauté them with a little olive oil in a large pot over medium heat. Also dice the sweet potato, carrots, and bell pepper and sauté the vegetables for 5 minutes. Deglaze everything with the 750 ml water and add the 2 vegetable stock cubes. Let it simmer for 20 minutes over medium heat. Then puree with an immersion blender and add 3 tablespoons of olive oil. Season to taste with pepper.
