Ingredients for 4 servings:
- 750 g sweet potatoes
- 1 onion(s), chopped
- 2 clove(s) garlic, chopped
- 2 tbsp olive oil
- 1 liter vegetable broth or chicken broth
- 1 sprig(s) rosemary
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel, wash, and dice the potatoes. Heat the oil in a pan and fry the onion until translucent. Add the garlic and fry briefly. Then add the potatoes, mix, pour in the broth, and bring to a boil. Strip the rosemary needles from the sprig and add them to the soup. Let everything simmer for about 10 minutes. Then puree, season to taste, and serve with toasted baguette or toast.
