Sweet potato soup with Bockwurst

Ingredients for 5 servings:

  • 100 g onion(s)
  • 2 cloves garlic
  • 1 ½ tbsp rapeseed oil
  • 500 g sweet potatoes
  • 1 tbsp, leveled curry powder
  • 750 ml water
  • 3 tsp vegetable broth
  • 100 ml cream
  • 3 pieces of Bockwurst

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the onions and garlic and dice them into small cubes. Wash, peel, and roughly dice the sweet potato. Sauté the onions and garlic in rapeseed oil, add the sweet potatoes, and sauté briefly. Add the curry powder and fry for about 1 minute. Add the water, add the vegetable stock, and simmer for about 25 minutes. Then purée the soup finely. Slice the sausage and add it. Finish with cream and season with salt and pepper.
