Ingredients for 4 servings:

  • 500g penne
  • 1 large onion(s), red
  • 2 cloves garlic
  • 1 jar tomatoes, dried in oil
  • 1 can tomatoes, chopped
  • 1 cup whipped cream
  • 200 g fresh leaf spinach
  • 500 g chicken breast
  • 100 g cheese, grated
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 pinch of chili flakes

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Add the pasta to salted, boiling water and cook until al dente. This should take roughly 11 minutes. Dice the red onion, garlic cloves, and pickled sun-dried tomatoes. Cut the chicken breast fillets into bite-sized cubes, season with salt and pepper, and fry in a pan with a little oil. Then add the diced onions, garlic, and tomatoes. Once the chicken has browned, add the can of diced tomatoes and bring to a boil for 2-3 minutes. Then add the cup of heavy cream and stir everything once. Finally, add the previously washed spinach leaves to the pan. This should break down relatively quickly. Season the sauce to taste with salt, pepper, and chili flakes. Finally, drain the pasta and add it to the sauce. Sprinkle a handful of cheese on top and serve.
