Sweet Potato Soup with Caramelized Green Sparge
The perfect sweet potato soup with caramelized green sparge recipe with a picture and simple step-by-step instructions.
- 200 g White sweet potato
- 200 g Potatoes
- 2 Carrots
- 750 ml Vegetable broth
- 150 g Green asparagus
- 1 Tl Peanut butter
- 2 Tl African blend of spices
- 2 Tl Date balm
- Sesame
- Oil
- Peel and dice the carrots, potatoes and sweet potatoes.
- Cook in vegetable stock until soft.
- Puree with peanut butter and African seasoning mixture.
- Cut the asparagus into small pieces, fry in a little oil for 3 minutes. Add the date balm and caramelize for another 3 minutes.
- Serve with soup and sprinkle with sesame seeds.
