Sweet Potato Soup with Caramelized Green Sparge

Ingredients
 

  • 200 g White sweet potato
  • 200 g Potatoes
  • 2 Carrots
  • 750 ml Vegetable broth
  • 150 g Green asparagus
  • 1 Tl Peanut butter
  • 2 Tl African blend of spices
  • 2 Tl Date balm
  • Sesame
  • Oil

Instructions
 

  • Peel and dice the carrots, potatoes and sweet potatoes.
  • Cook in vegetable stock until soft.
  • Puree with peanut butter and African seasoning mixture.
  • Cut the asparagus into small pieces, fry in a little oil for 3 minutes. Add the date balm and caramelize for another 3 minutes.
  • Serve with soup and sprinkle with sesame seeds.
