Sweet Potato Soup with tomato Topping

Ingredients
 

  • 2 Sweet potatoes, about 350 gr.
  • 1 Onion
  • 1 small Garlic
  • 1 Ginger, double walnut size
  • 2 Tomato
  • 1 small Parsley root
  • 1 small Carrot
  • Clarified butter
  • 1200 ml Vegetable broth
  • 1200 ml Salt
  • Pepper mix
  • Lemon juice
  • 3 tbsp Sour cream
  • Chives
  • Tomatoes pickled in oil

Instructions
 

  • Peel and finely dice the onion, garlic and ginger. Peel and chop the sweet potato, carrot and parsley root. Peel, core and finely chop tomatoes.
  • Heat the clarified butter and first sweat the onion-garlic-ginger mixture well. Then add the remaining root vegetables and sweat everything nicely. Deglaze with the hot vegetable stock and season with a little salt and pepper. Simmer on a low heat until the vegetables are nice and soft.
  • In the meantime, drain the pickled tomato a little and cut it into small pieces. Cut some of the chives into thin rolls.
  • Now puree the soup finely and then stir in the sour cream and round off with lemon and, if necessary, with salt & pepper.
  • Put the soup in a soup cup and garnish with the tomato pieces and chives ..... enjoy your meal .....
