Sweet Potato Soup with tomato Topping

The perfect sweet potato soup with tomato topping recipe with a picture and simple step-by-step instructions.

  • 2 piece Sweet potatoes, about 350 gr.
  • 1 piece Onion
  • 1 small pieces Garlic
  • 1 piece Ginger, double walnut size
  • 2 piece Tomato
  • 1 small Parsley root
  • 1 small Carrot
  • Clarified butter
  • 1200 ml Vegetable broth, ….. Link see below …..
  • 1200 ml Salt
  • Pepper mix
  • Lemon juice
  • 3 tbsp Sour cream
  • Chives
  • Tomatoes pickled in oil
  1. Peel and finely dice the onion, garlic and ginger. Peel and chop the sweet potato, carrot and parsley root. Peel, core and finely chop tomatoes.
  2. Heat the clarified butter and first sweat the onion-garlic-ginger mixture well. Then add the remaining root vegetables and sweat everything nicely. Deglaze with the hot vegetable stock and season with a little salt and pepper. Simmer on a low heat until the vegetables are nice and soft.
  3. In the meantime, drain the pickled tomato a little and cut it into small pieces. Cut some of the chives into thin rolls.
  4. Now puree the soup finely and then stir in the sour cream and round off with lemon and, if necessary, with salt & pepper.
  5. Put the soup in a soup cup and garnish with the tomato pieces and chives ….. enjoy your meal …..
