Ingredients
- 2 Sweet potatoes, about 350 gr.
- 1 Onion
- 1 small Garlic
- 1 Ginger, double walnut size
- 2 Tomato
- 1 small Parsley root
- 1 small Carrot
- Clarified butter
- 1200 ml Vegetable broth
- 1200 ml Salt
- Pepper mix
- Lemon juice
- 3 tbsp Sour cream
- Chives
- Tomatoes pickled in oil
Instructions
- Peel and finely dice the onion, garlic and ginger. Peel and chop the sweet potato, carrot and parsley root. Peel, core and finely chop tomatoes.
- Heat the clarified butter and first sweat the onion-garlic-ginger mixture well. Then add the remaining root vegetables and sweat everything nicely. Deglaze with the hot vegetable stock and season with a little salt and pepper. Simmer on a low heat until the vegetables are nice and soft.
- In the meantime, drain the pickled tomato a little and cut it into small pieces. Cut some of the chives into thin rolls.
- Now puree the soup finely and then stir in the sour cream and round off with lemon and, if necessary, with salt & pepper.
- Put the soup in a soup cup and garnish with the tomato pieces and chives ..... enjoy your meal .....
