Ingredients for 1 servings:
- 25 g butter
- 50 g cane sugar (raw cane sugar)
- 200 g sweet potatoes, peeled and roughly diced
- 75 ml orange juice
- 1 pinch of salt
- e.g. vanilla sugar
Instructions

delicious on bread or used in cakes
Lightly caramelize butter and sugar in a small saucepan. Add the sweet potatoes and sauté briefly, deglaze with orange juice, add salt and vanilla sugar, and simmer for about 10 minutes until soft. Mash with a potato masher and let cool. Makes a small bowlful of spread. Delicious on buttered bread or can be made into a cake. (See: “Sheet Pan Sweet Potato Cake”)
