Sweet potato, turkey and coconut curry

Ingredients for 4 servings:

  • 4 sweet potatoes
  • 2 turkey schnitzels
  • 2 carrots
  • 1 can coconut milk
  • 2 tsp peanut butter
  • 1 ½ tsp red curry paste
  • Salt
  • Peanut oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the turkey schnitzel into strips. Heat oil in a pan and brown the turkey, then remove from the pan and set aside. Dice the sweet potatoes and slice the carrot. Brown both in the pan, adding a little more oil if necessary. Deglaze with coconut milk. Return the turkey to the pan and add the peanut butter and curry paste. Let everything simmer for about 15 minutes. Season with salt. We served it with brown rice. Since I’m currently breastfeeding, we don’t eat anything too spicy. Add more curry paste if necessary.
