Sweet roast potatoes

Ingredients for 4 servings:

  • 1 kg potatoes, boiled the day before as jacket potatoes, very small (or diced)
  • 2 tbsp butter, or lard, or both
  • 1 ½ tsp salt
  • 1 tbsp sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

sounds strange, but is very tasty

Heat butter and/or lard in a deep, heavy skillet over medium heat. Add the potatoes and fry until golden brown on all sides. Shake the pan vigorously every now and then to prevent the potatoes from sticking. Add salt and sugar to the potatoes only in the last few minutes. Toss them vigorously a few more times, then serve. Serve with salad or as a side dish with Holstein kale. Tip: If possible, let the potatoes cool uncovered the day before so they dry out completely.
