Ingredients for 6 servings:
- 1 kg potatoes, waxy
- 250 ml vegetable stock
- 1 large cucumber(s) , or 2 small
- 2 onions, white
- 125 g bacon, lean
- salt and pepper
- 1 handful of chives
- 2 tsp mustard, medium hot
Instructions
Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 55 minutes
Peel the potatoes and boil in a large pot of salted water until al dente. In the meantime, dice the bacon. Peel and dice the onions. Peel the cucumber and cut into small pieces. Sauté the onion and bacon mixture in a pan and transfer to a bowl. Add the cucumber. Once cooled, dice the potatoes and add to the other ingredients. Mix the vegetable stock with the mustard and pour over the ingredients. Season to taste with salt and pepper, and sprinkle with chives. Refrigerate for 1 hour, mix again, and season to taste.
