Swiss chard pesto

Ingredients for 1 servings:

  • 350 g chard
  • 50 g pine nuts
  • 100 g sunflower seeds
  • 140 g hard cheese
  • 4 garlic cloves
  • 200 ml olive oil or rapeseed oil
  • 30 ml lemon juice
  • salt and pepper
  • 1 pinch(s) of sugar, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Separate the leaves and stems of the chard and chop both finely. Pre-cook the stems in boiling water for 2 minutes, add the leaves, and cook together for another 4 minutes. After the cooking time, drain the water. Peel the garlic and chop into large pieces. Grate or finely chop the cheese. Toast the pine nuts and sunflower seeds in a non-stick pan without oil. Purée all ingredients in a sufficiently large bowl. Season with salt, pepper, and lemon juice. A pinch of sugar can round out the pesto.
