Ingredients for 1 servings:
- 300 g flour
- 1 pinch of cinnamon
- 1 pinch of cardamom
- 1 tsp orange peel, grated
- 21 g yeast, fresh
- 1 tsp sugar
- ⅛ liter of water, lukewarm
- 50 g butter, soft
- 1 egg(s)
- 200 g sugar
- 200 g honey
- 150 ml water
- 1 tbsp orange blossom water, alternatively lemon juice
- Oil for frying
- n. B. Pistachios, chopped, for sprinkling
Instructions
Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes
Oriental fried pastries – enough for about 25 pieces
Place the flour, cinnamon, cardamom, and orange zest in a bowl and make a well in the center. Crumble the yeast and mix with the sugar and 1/8 liter of lukewarm water, then add to the well. Spread the butter – cut into flakes – around the edge. Cover and let rise for about 30 minutes. Whisk the egg and add it to the pre-dough in the well. Knead everything into an elastic dough (adding more water if necessary). Cover and let rise for another 40 minutes. For the syrup, boil the sugar with honey and 150 ml of water for about 5 minutes. Then stir in the orange blossom water or lemon juice and let cool. Heat the oil. Shape the dough into about 25 balls and fry in batches in the hot oil for about 4-5 minutes until golden brown, turning once. Remove from the bowl, drain on kitchen paper, and keep warm. To serve, pour the syrup over the balls and sprinkle with pistachios.
