also tastes good with other jams, for about 100 pieces
Makes about 100 slices. Gently heat the syrup, sugar, butter, orange zest, and salt, then add the water and stir over low heat until the sugar has melted. Transfer the mixture to a mixing bowl and let it cool slightly. Add the flour, baking powder, and egg and knead into a heavy dough. If it’s too wet, add a little more flour; if it’s too dry, add a few drops of water. Roll out half of the dough thinly between two layers of cling film (approx. 30 x 40 cm) and place the dough sheet on a baking sheet lined with baking paper. Spread the dough sheet with bitter orange marmalade, roll out the remaining dough thinly, and place it on top of the marmalade to form a layer. Prick all over with a fork several times. Bake in a preheated oven at 190°C for about 18 minutes. In the meantime, mix the powdered sugar, 3 tablespoons of orange juice, and the flavoring to make a glaze and spread it on the dough immediately after baking. Allow to cool completely again. Then cut into small pieces (1.5 x 3 cm) and store in a suitable container until ready to enjoy.
