Ingredients for 4 servings:

  • 250 g couscous
  • 150 ml water (possibly more)
  • 5 tomatoes
  • 1 small cucumber(s)
  • ½ bunch coriander
  • ½ bunch parsley
  • ½ bunch mint
  • 1 lemon(s), the juice
  • 6 tbsp oil
  • 1 onion(s)
  • salt and pepper

Working time approx. 30 minutes; Total time approx. 30 minutes

African salad

Soak the couscous in 150 ml of water with 1 tablespoon of oil. Dice the cucumber, tomatoes, and onions. Finely chop the fresh herbs. Mix the finely chopped ingredients with the soaked couscous. Season to taste with the remaining oil, lemon juice, salt, and pepper. It tastes best with fresh herbs. What to do if you don’t have any: You can omit the mint if necessary. Instead of fresh parsley, you can also use frozen parsley, and coriander is also available as a dry herb.
