Taco Casserole

Ingredients for 4 servings:

  • 1 pack of chips (Taco flavor – you can choose your own)
  • 400 g chicken breast fillet(s)
  • 1 bag of ready-made chili con carne mix (or season yourself, depending on how quickly you need it)
  • 1 gr. can/n corn
  • 1 gr. can/n tomatoes, pureed
  • 250 g cheese (grated Emmental)
  • salt and pepper
  • Paprika powder, sweet
  • lemon juice
  • chili powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Dice the chicken breast fillets, sprinkle with pepper and paprika, sear, then add the can of crushed tomatoes. Add salt! Stir in the chili con carne and season with salt, pepper, lemon juice, and chili. Drain the corn and add it. Cover the bottom of a greased baking dish with crumbled taco chips and pour the chicken tomato sauce over them. Place a corner of the remaining taco chips into the casserole and sprinkle with cheese. Bake at 200°C for about 15 minutes.
