Tagliatelle in lemon sauce

Ingredients for 2 servings:

  • 200g tagliatelle
  • 30 g butter
  • 2 lemons
  • 10 basil leaves
  • 1 dash of olive oil
  • 50 g hard cheese (Grana Padano), Parmesan or other hard cheese
  • a little salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the tagliatelle in salted water until al dente. Melt the butter in a wide pan with a dash of olive oil. Squeeze the juice of two lemons and then add it to the pan. Add 8 basil leaves to the sauce and simmer for 2-3 minutes. Season with salt and pepper. Grate the hard cheese. Drain the pasta, reserving about 2-3 ladles of cooking water. Add the pasta to the pan, toss with the sauce, and add more cooking water as needed. Add half of the grated cheese to the pan and toss or stir. Arrange on plates, then decorate with the remaining basil leaves and grated cheese and serve. Tip: If you like, you can also sprinkle toasted, chopped almonds on top.
