Tagliatelle with smoked salmon in creamy lemon sauce with cherry tomatoes

Ingredients for 2 servings:

  • 250g tagliatelle
  • 1 onion(s)
  • 1 lemon(s), untreated
  • 1 tbsp vegetable stock powder
  • 1 pack of stremella salmon, approx. 150 g
  • 200 g cherry tomatoes
  • 100 ml sour cream
  • 1 tbsp vegetable oil for frying

Bring salted water to a boil in a large pot for the tagliatelle and cook the pasta according to the package instructions. Drain the pasta in a colander and set aside. Meanwhile, peel the onion, halve it, and slice it into thin strips. Zest and halve the lemon. Squeeze one half and cut the other half into 2 pieces. Tear the smoked salmon into small pieces. Halve or quarter the cherry tomatoes as desired. In the same pot, sauté the onions in oil for 3-5 minutes. Add the vegetable stock powder, mix, reduce the heat, and stir in the smoked salmon. Add the tagliatelle, then the sour cream and lemon juice, stirring frequently until evenly combined. Serve the dish in a deep plate with the lemon wedges.
