Ingredients for 4 servings:

  • 750 g potatoes
  • 80 g flour
  • 1 egg(s), depending on size
  • 1 cup sour cream
  • 1 bunch of chives
  • 100 g butter
  • Salt
  • Flour for the work surface
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

simple, old recipe from the Ries

Boil the potatoes, mash them, spread them out on a baking board, and let them cool. Mix in the flour and salt and quickly knead them with the egg into a firm dough. Let them rest for 30 minutes. Then, to prevent stickiness, roll out the dough thinly with a little flour and cut into squares, about 5 x 5 cm, using a wheel or a knife. Layer them in a greased baking dish, spread with sour cream, and sprinkle with chives. Continue layering until all the dough is used up. Cover the top layer with butter flakes. Bake in a hot oven at 200°C (top/bottom heat) for about 30 minutes until golden. An old recipe from the Ries region – as a side dish to sauerkraut or roast.
