Ingredients for 4 servings:

  • 8 m.-sized eggs
  • 50 g cheese, grated
  • 8 tbsp milk
  • 2 chorizos
  • 1 small onion(s)
  • ½ tomato(s)
  • Salt and pepper, black
  • Cayenne pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Separate 6 eggs. Add 6 tablespoons of milk to the egg yolks and season as desired. Slowly set the egg yolk mixture in a non-stick pan over medium heat. Meanwhile, slice the onion into half rings and the chorizo ​​into thin slices. Dice the tomato. Reduce the pan to low heat. Then spread the onion, chorizo, and tomato evenly over the set egg yolk. Beat 6 egg whites with a pinch of salt until stiff peaks form. Spread the beaten egg whites over the sausage, onion, and tomato filling, smooth it out, and let it set with the lid on over low heat. When it’s done, carefully slide it onto a plate so it doesn’t break. Meanwhile, beat the remaining 2 eggs with the rest of the milk and the grated cheese. Cook them in the pan to make a thin omelet. Use this as the top layer to cover the pancake. With salad, this serves 4 people, or 2 without.
